There’s so much to talk about. The heady aromas floating around the Bakery are intoxicating and as I sit upstairs in the office I can barely concentrate. So let’s talk about Christmas in Dunn’s – there just so much to choose from. Every time I write my Christmas list I add something else. Right here goes… Christmas Pudding… oh yes! and our homemade Brandy butter. Mince pies – what to choose? There’s Shortcrust , Wholemeal or wonderful flaky puff. I know I’ll get an assorted box then everyone is happy. Christmas cake - thankfully we have our traditional fruit and a lovely light sponge cake so no problem there. Oh  I must get the gingerbread for the children, they love the fun Christmas shapes and then there’s the fancy cakes, snow people with their brightly coloured scarves and Santa’s chimney a particular favourite. There’s the fresh cream gateaux for those who want a creamy after dinner treat.  But then there’s  the Ganache Yule logs that have both the cream and chocolate – just too yummy to resist! Hey, after all the cooking I am doing I deserve a treat! I usually buy the mini Christmas cake and Mini Dundee cake for my neighbour , because she lives on her own a mini cake is just enough for her. Oh the Dundee cake I must add that to the list … I think it will be nice to try the Cherry Orange Dundee, a lovely zesty, tangy taste. Oh, but there’s the Stollen and this year it has cranberries in it. I got to taste test it (One of the perks of the job!!). It is lovely fruity and juicy. However, these feelings were cut off as soon as I got myself into the job. Being welcomed into a well knitted work environment like Dunn’s where everybody is well acquainted  did mean a lot to me, and when I realized that I had no reason to worry I was able to feel comfortable in the friendly atmosphere. This comfort was the beginning of a good three months, because once I felt settled I was able to get down to work, and work I did! I cannot express how much I learned because it’s simply too much to explain. Not only my practical skills improved but my confidence in my work rocketed and I can now say that I would have no hesitation in tackling a cake design. Of course not all things were amazing, over the three months something had to be bad. This low point came in the form of early mornings! I cannot deny that having to be in work and ready to go at 5am on a Saturday morning was not something I looked forward to each week, but I did get on with it and somewhat grew use to the routine. However, this is all that I have to complain about, which realistically isn’t much, making the whole experience an absolute success. I went to Dunn’s to learn new things and develop my skills in a pastry kitchen, and that is exactly what I achieved. There was a shift from weighing out ingredients when baking to measuring out ingredients. According to food historians there are two theories for why they are called cupcakes: one, the cakes were originally cooked in cups and two; the ingredients used to make the cupcakes were measured out by the cup.  This also meant that in the days of hearth ovens the smaller cupcakes were easier and quicker to bake than large slab cakes. Apparently we do not advertise enough the fact we have a fabulous range of bread, rolls & cakes using that must have ingredient ‘Spelt’. Infact a local customer of ours was totally unaware we even sold spelt & had been going to great lengths to find spelt bread locally; luckily for us they have now been converted. But what is spelt; well it’s an ancient wheat (a cousin to Wheat) that is said to be more digestable than our modern wheat.  It is also possible that some people who are ‘gluten’ intolerant are able to digest spelt but not if you suffer from coeliac.  Many products that use spelt are wholegrains making them nutritionally better for you; they also fill you up more & for longer.  Is it a wonder food, who knows all we know is people love it! NATIONAL PICNIC WEEK – BLOG 18-24 June 2012 On trawling through the internet I came across National Picnic Week, never knew there was a thing, so I did what everyone else does these days & Googled! It is truly amazing what you can find; did you know that during the 14th Century a Picnic was a Medieval Hunting Feast, with cheese, pastries & other specialty baked goods were served.   In the oxford English Dictionary a Picnic is described as “a fashionable social entertainment in which each person present contributed a share of the provisions; a party including an excursion to some spot in the country. ~ a nice thought! These days a picnic is still a social gathering & with Jubilee Celebrations & other events throughout the summer we will no doubt see the Picnic as popular as ever.   Although usually a family gathering… I don’t know about you but I can remember being dragged to the beach in the freezing weather & we would normally ending up eating the beach in the sandwiches…ahh happy days! The first Diamond Jubilee celebrated in the UK was that of Queen Victoria on 20th June 1897, & whilst our current queen celebrates her Diamond Jubilee on the 5th June the actual 60th anniversary of her accession occurred on 6 February 2012. Over the long weekend whilst friends, family & neighbours will be encouraged to join together in a Big Jubilee Lunch elsewhere there will be lots of pomp & pageantry one of the highlights will be on the river Thames with a large flotilla of boats…so….. Get out the Bunting, balloons & the flags……as the Diamond Jubilee reaches its pinnacle help is here at hand from Dunns Bakery…… we have some really beautiful creations that could adorn any celebration table so go on….invite your friends, family & neighbours, lay out the cups, the plates & the napkins let’s get the party off to a truly glorious start….fill your table with some of our delicious moist vanilla or chocolate cupcakes; choose from buttercream topped with crowns & flags or covered in yummy fondant icing & affixed with an edible logo – at least you can say you ate the queens head! Officially spring began on the 20th of March which means we should be well into the wedding season. For couples that tied the knot this time last year the UK was enjoying an unusually dry and warm spring. Sadly the same can’t really be said about this year. A ‘wash-out’ wedding is something the bride and groom fear most. It is a day they have put a great deal of time, effort and money into and would like to look back on it with only the finest memories. However, the wedding day is ultimately about two people making a lifelong commitment to each other and then celebrating with the people they love, their families and friends. If you are having a spring wedding, our advice is to pay close attention to the weather in the weeks leading up to the wedding. If there is a high chance of rain on the day, then measures should be taken such as ensuring there is enough shelter for people not to get wet. Sadly, we cannot control the weather on our wedding. However just about everything else on that special day we can control. Between the bride and groom almost everything is decided; the guest list, the venue, the wedding dress, the wedding cake, the catering, the entertainment, the flowers and the photographer are all your choice. There’s so much to talk about. The heady aromas floating around the Bakery are intoxicating and as I sit upstairs in the office I can barely concentrate. So let’s talk about Christmas in Dunn’s – there just so much to choose from. Every time I write my Christmas list I add something else. Right here goes… Christmas Pudding… oh yes! and our homemade Brandy butter. Mince pies – what to choose? There’s Shortcrust , Wholemeal or wonderful flaky puff. I know I’ll get an assorted box then everyone is happy. Christmas cake – thankfully we have our traditional fruit and a lovely light sponge cake so no problem there. Oh  I must get the gingerbread for the children, they love the fun Christmas shapes and then there’s the fancy cakes, snow people with their brightly coloured scarves and Santa’s chimney a particular favourite. There’s the fresh cream gateaux for those who want a creamy after dinner treat.  But then there’s  the Ganache Yule logs that have both the cream and chocolate – just too yummy to resist! Hey, after all the cooking I am doing I deserve a treat! I usually buy the mini Christmas cake and Mini Dundee cake for my neighbour , because she lives on her own a mini cake is just enough for her. Oh the Dundee cake I must add that to the list … I think it will be nice to try the Cherry Orange Dundee, a lovely zesty, tangy taste. The Redemption Brewing Company is a small brewery based in North London.  They have been Brewing since January 2010.  They are passionate brewers of cask ale, committed to using the finest raw materials to craft beers with flavour, character and integrity.  This was something that appealed to us and fits in with our ethos to source from local suppliers wherever possible so the chance to use beer brewed in Tottenham was an opportunity not to be missed! The award was given to Christopher  for his commitment to the Baking industry, dedication to the training of future bakers and his charity  fundraising.  He founded National Doughnut week over twenty years ago and has to date raised more than £740,000 for children’s charities.  Christopher also supports local charities and always tries to donate either baked goods or vouchers for Dunn’s Bakery products. As past president of Allied Bakery Student Training ( ABST) in 2010 and president-elect of  The National Association of Master Bakers for 2012 his dedication to the baking industry is  paramount in everything he does .  Whether it’s training visiting bakery students to devising new bakery products  such as the New ” redemption ale bread”  Made from locally brewed beer in Tottenham Christopher’s commitment comes from being a fifth generation baker – baking is truly in his blood. Baker of the Year finalist BIA Awards 2011 Christopher was also a finalist for The Baker of the year at the BIA awards.  Although the award was won by Ditty’s Bakery of Castledawson there was only half a point difference between the winner and runner-up.   All  three finalists including David Smart of Greenhalgh’s  Bakery in Bolton were all bakeries that focussed on promoting not only the baking industry and it’s craft but also  their  links to the local community. Duun’s News It’s March and there is a distinctly spring feeling here in dunn’s bakery.  Neil our cake decorator is busy  preparing  the chocolate ofr our Easter Bunnies.  This is Neil’s first easter with us.  Neil’s background is in patisserie and Confectionery.  Neil says that it was the opportunity to work   in a traditional craft bakery that bought him to Dunn’s.  “it is being able to work from start to finish  with the raw ingredients and  seeing your products on display that really is a thrill for me, there are not many Craft Bakeries left in London”. Not only providing the firm favourites such as our doughnuts but also new future favourites like our spelt and cranberry muffins and GI bread which is one of our best sellers! Finest Freshest!   This week had the heady aroma of cheese in the bakery .  Once again Next retail had a batch of our tasty flaky cheese straws for an event in Old Billingsgate.  Each pair of cheese straws were hand packed so there was quite a production line and the smell drifting through the bakery was mouth watering!
